This amazing coffee comes from Ethiopia's district of Yirgacheffe and community of Banko Chelchele. For traditional Natural processed coffees, once picked from the plant the coffee cherry is laid out in the sun to dry and over a couple of weeks the fermentation starts to happen when the natural yeasts and bacteria start to break down the sugars. This coffee, however, is a Super Natural! Once these coffee cherries are picked they go directly (fully intact) into a fermentation tank for 24 hours. Once that process is done they are laid out to dry for several weeks on raised beds, just like any other natural. This process really brings out a sweet and juicy cup that is also well rounded with chocolate notes. We think this works perfect as a single origin espresso, cold brew, or pour over!
