For generations this community has been cultivating coffee among the other fruits and vegetables they grow. In 2020 a local producers co-op \u003cspan\u003eAsociación de Productores Cerro Blanco\u003c\/span\u003e (named after the white sand mountain that surrounds the area) was formed\u003cspan\u003e with the goal to implement sustainable practices and increase quality. The coop started with 10 families and today \u003c\/span\u003e300 families belong to the co-op, which are now all certified Organically grown and Fair Trade certified. This particular lot is decaffeinated by the Swiss Water Process method, which uses green coffee extract and carbon rather than chemicals. The result is a sweet Decaf coffee that has good body.
